Blackened Pork Chops

Omg.. These pork chops are so good and full of flavor!!! The next day, I made the same thing but with chicken. Tonight I am gonna use tilapia!

Gather the following:

4 Boneless porkchops (or two filleted chicken breasts)
4 Tablespoons butter
2 tsp paprika (i use smoked paprika, gives an awesome flavor)
1 tsp garlic powder
1 tsp ground pepper (i used freshly grounded)
1/2 tsp thyme
1/2 tsp salt
1/4 onion powder (i did not have any :(..
1 tsp chili powder
1/2 tsp oregano



Melt butter in a small bowl.
Mix spices in another small bowl. 
Bring a cast iron pan to med/hi heat. (Do not put anything on the pan yet.) Heat for about 5 min.


Dip the chops in butter and then dip in the seasonings. Place all the seasoned chops on the hot skillet. Cook until blackened. Turn after a few minutes. They will be black..  I thought I burnt mine but I didn't!!

Want Shiny Hair?!

My friend Leslie and I decided to test out a DIY hair treatment from Pinterest. We were after shine and softness. Here are the ingredients we gathered...


For the two of us (both with long hair), we used two large avocados. Only one made it in the picture.
We took out the egg yokes. I measured about two TBSP each of honey and olive oil.
 This is what it created... 



Apply to whole head, from root to tip!



Rinse with lukewarm water. Shampoo and Condition.

Style as usual...


Look at the Shine!!!


Warning... Do not rinse with hot water or the eggs will cook! And after rinsing, hair will not immediately feel soft. Fingers will not even go thru hair very easy.  (like its super super clean.. ) but keep blowdrying and it will be soft and shiny!

Vegetarian Lasagna Cups

I have been on this mission to use wonton wrappers at least once a week I guess! This is something I just thought of... I replaced the normal Lasagna cups with 'meatless' ground meat. SOY!

Wontons are great.. You can put anything in them. Baking them is of course healthier than frying, and it is just as good. I use the Nasoya Wonton Wraps found in the produce section.

Like I have said before, I usually cook just for two or so people. So tonight, I made 12 lasagna cups. That is plenty! I figured each cup to be about 80 calories and about 2.5 fat grams. Not bad. I had 4 cups and that's all I am hungry for.

Here is what you need:


I used 24 wontons (2 for each cupcake)
Any spaghetti sauce (about a cup)
Half a package of meatless ground (found in produce section.)
Some cheese of your choice.
Any other addons (I added a few chopped artichokes)

Spray the cupcake pan with either pam or olive oil spray. i put two wraps in each cup.



Simmer the half package of "ground" meat, 1 cup of sauce, and whatever else you wanna add in. This is when I added a few chopped artichokes. Let simmer.



Next I added a little cheese on bottom of my "cups". Followed by a tablespoon or so of the sauce, adding this on top of the cheese. Then top it off with a little more cheese. I put mozz. on the bottom and Parmesan on the top. So now it should look like this....

Bake on 375 until the edges are golden and cheese is melted. Enjoy!!

Me? Like artichokes?!

Pinterest's "Italian Chicken" was easy, quick, and GOOD!


                       
I try to cook for two since its just Donald and I. Sometimes i like leftovers for lunch the next day. So two chicken breasts was plenty. 



I think I fell in love with artichokes! I bought "marinated artichokes" in the jar at walmart.

I also made sure I used FRESH basil leaves. The flavor is soooooo good.
This recipe is for sure a keeper!

sick... :(

After going to urgent care for two hours, I came home and decided to make a soup.
This is called "Sick Soup"



I pretty much all the ingredients. I added the mushrooms just because I had them on hand. This is the first time I have used sweet potato in soup. I love using fresh ginger. Gives it an Asian kick with the mushrooms. Fresh herbs are always great.. I used cilantro, fresh basil, and fresh parsley!

Swedish Meatballs

AHHH swedish meatballs over egg noodles. 


This took a little longer to make than I thought, but it sure was worth it. This is a low fat recipe originally from laloosh.com. I found it on Pinterest. So worth making again, but maybe not on a weeknight when we both are starving. I added a little cornstarch to the sauce to thicken it up. I added my egg noodles to the pan of meatballs and sauce. (You may be able to see the steam in the pic). I never cooked anything with meat and cinnamon  in the same recipe.. I was happy with it!

So last night I made the "Eva Longoria Tortilla Soup". I was pretty good, but a touch too spicy for Donald.

I pretty much followed the recipe, but I could not find a pasilla pepper. I substituted it with a large pablano pepper. I ALWAYS use more cilantro than a recipe says. I used more like 1/4 cup.


Here is the recipe from my pin on my "FOOD" board.

6 whole Roma tomatoes
1/2 cup olive oil, divided
1 medium onion, diced
1/2 bunch celery, diced
1 pasilla chili pepper, diced
1 jalapeño pepper, diced
1/4 cup garlic, chopped
6 cups hearty chicken stock
1/2 cup lime juice
1/2 teaspoon cayenne pepper
2 teaspoons chili powder
2 teaspoons ground cumin seed
1 tablespoon paprika
1 bay leaf
2 boneless chicken breasts, cut into strips
2 tablespoons fresh cilantro leaves
Tortilla chips, avocado, jalapeños, and sour cream to garnish
1. Preheat oven to 350 degrees F. In a bowl, toss tomatoes with half the oil, 1 teaspoon salt, and a pinch of black pepper. Spread on a baking pan and roast until light brown, 25 to 30 minutes.
2. While tomatoes are roasting, in a stockpot over medium heat, sauté onion, celery, peppers, and garlic in remaining oil. Stir frequently until soft and translucent.
3. To stockpot add chicken stock, lime juice, cayenne, chili powder, cumin, paprika, and bay leaf. Bring to a boil, then reduce to a simmer. Simmer 20 minutes.
4. Remove roasted tomatoes from oven (peel should be falling off), and add to broth.
5. Add chicken-breast strips and simmer 10 minutes.
